Recipe of Paneer Malai Tikka

The delicious Paneer Malai Tikka is perfect to a lot of unanswered questions in life.

Paneer Malai Tikka Ingredients

For Marination:

  • 10-12 cashewnut
  • 2 tbsp grated cheese
  • 2 tbsp fresh cream
  • 1.5 tbsp hung curd
  • 1 tbsp ginger-garlic paste
  • 1.5 t/s lime juice
  • 1-2 t/s kashmiri red chili powder or as required
  • ½ t/s garam masala powder
  • 1 t/s roasted cumin powder
  • 1 t/s coriander seed powder (dhaniya)
  • 1 t/s amchur powder
  • 1 tbsp chat masala
  • ¾ t/s pepper powder
  • ½ tbsp crushed dry fenugreek leaves (kasuri methi)
  • 1 t/s sugar
  • black salt (kala namak) or rock salt


Other Ingredients:

  • 250 gms cottage cheese (paneer) diced into squares (i used store bought paneer)
  • 3 tbsp oil
  • 1 capsicum or bell pepper (optional) chopped into squares
  • 1 onion chopped into squares

Recipe of Paneer Malai Tikka

  1. Combine everything into the blender except kasuri methi and chat masala. Blend into a smooth paste.
  2. Add the kasuri methi and give a nice whisk.
  3. Now add the squared paneer and veggies to the marinade.
  4. Mix gently with your hand or just toss them gently. Ensure they are coated nicely with the marinade. Set aside for 30-40 mins, you could marinate in the fridge for a longer time if you wish.
  5. Skewer the paneer and veggies on a skewer gently. To avoid a mess stack them over a platter.
  6. Grease a pan with oil and place them over the greased pan. Preheat the oven to 200°C exactly 15 mins before baking.
  7. Bake for 10-12 mins. Brush them with oil or spray oil over them also if you have more marination mixture pour that too over them. Again bake for 10-15 mins more. Sprinkle some chat masala and squeeze lime juice over the tikka.
  8. Serve the malai paneer tikka with lemon wedges and green chutney.

How to Cook Chilly Baby Corn Mushroom

Ingredients for Chilly Baby Corn Mushroom

  • Mushrooms- 1 cup (chopped)
  • Baby corn- 1 cup (sliced)
  • Onion- 1 (diced)
  • Garlic- 2-3 cloves (chopped)
  • Ginger-garlic paste- 1tbsp
  • Green chillies- 4 (sliced)
  • Pepper powder- 1tsp
  • Soy sauce- 2tbsp
  • Tomato sauce- 1tbsp
  • Corn flour- 1tsp
  • Salt- as per taste
  • Spring onion stalks- 2 (chopped)
  • Oil- 2tsp
  • Water- ½ cup

Method of making Chilly Baby Corn Mushroom

  1. Wash and clean the mushrooms properly removing all dirt. Wash the babycorn and slice them into halves.
  2. Heat oil in a pan and add the chopped garlic and onions. Fry until they turn translucent.
  3. Now add the babycorn and fry for 2 minutes.
  4. Add mushrooms, ginger-garlic paste and green chillies. Fry for 5-7 minutes on low flame.
  5. Now add the soy sauce, tomato sauce, pepper powder and salt. Add a little water. Cover and cook on low flame for 2 minutes.
  6. Take the cornflour and mix it well with half a cup water.
  7. Remove the cover and add the cornflour mixture to the pan.
  8. Add the spring onions stalks and switch off the flame.
  9. Serve as starter or with rice or noodles.

Broccoli Soup Recipe


Preparation Time: 20 Minutes

Broccoli Soup Ingredients

  • 1 clove of garlic
  • 2 sticks of celery
  • 400 g broccoli
  • ½ a bunch of fresh mint
  • Olive oil
  • 1 litre organic chicken or vegetable stock
  • Ricotta cheese

Method of Making Broccoli Soup

  1. Peel and finely chop the garlic. Trim and roughly chop the celery and broccoli.
  2. Pick the mint leaves, then finely chop most of them, saving a few baby leaves to garnish.
  3. Heat a splash of oil in a pan, then soften the garlic and celery for about 2 to 3 minutes, then add the broccoli and stock.
  4. Continue cooking for another 5 minutes, then blitz with a handful of mint in a food processor.
  5. Season and serve, then crumble over the ricotta and scatter with the reserved mint leaves.
  6. Reserve an uncooked broccoli floret, cut it into small pieces and blanch in boiling water for 1 minute. Also reserve a small handful of crumbled cheese. Serve the soup in bowls, then scatter with crumbled cheese and broccoli for a stylish garnish.
